It’s nearly Pancake Day and if that doesn’t excite you enough you need some serious medical attention. I always used to make these on Pancake day when I was little and eat them with just a bit of lemon juice and sugar, but I’m a grown up now so I decided to go with something a bit more decadent: blueberry compote and whipped cream.
For your pancakes you need:
- 110g plain white flour
- A pinch of salt
- 200ml milk (I used skimmed)
- 2 tablespoons of cold water
- 2 eggs
- 2 tablespoons of melted butter
Whisk everything together until you have a lump-free batter that’s thick but still runny. Get a pan nice and hot and melt a tiny knob of butter, making sure the whole base is covered. Add a few spoons of your pancake batter and swirl it around the pan. Try to make a nice, even pancake but don’t worry about it too much. After a few minutes lift the edges up with a spatula and if it looks cooked DO THE FUN BIT!!!!

Slip it on to a plate and get cracking on the next one. (You can keep them warm in a VERY low oven if you want to be social and sit down and eat with people.)
Shove on a load of your topping of choice and VOILÀ! Your Shrove Tuesday is made. Tuck in.
