Galette Saucisse

I’m on a total pancake roll at the moment, and really can’t stop using the Pancake selfie app. I asked the Chap what he likes to eat with pancakes and he nearly fell of his chair shouting “GALETTE SAUCISSE!” at me. Once I’d worked out that he wasn’t speaking in tongues, just French, I made him explain.

He used to live in France, in Rennes to be precise, and over there they heart galette saucisse, which is basically a sausage in a buckwheat pancake. I mean, they LOVE this thing. There’s even a song about them. Mon Dieu.

He found me a recipe on Street Cuisine and packed me off to Waitrose on Saturday where I couldn’t find buckwheat flour and if I couldn’t find it in Waitrose I wasn’t going to find it anywhere else in Ealing. Also, I couldn’t be bothered to look. Instead I grabbed a bag of wholemeal and it would have to do.

For the pancakes:

  • 68g buckwheat or wholemeal flour (I used bread flour and it seemed fine)
  • 68g plain flour
  • 150ml milk
  • 2 tablespoons of water
  • 2 medium eggs
  • A good pinch of salt

For the sausages:

  • Sausages. Duh.
  • A good splash of Jack Daniels or Jim Bean
  • A squeeze of honey
  • A few drops of Tabasco

Whisk all your pancake ingredients together until you’ve a batter with no lumps. If it seems a bit too thin add a spoonful of flour and whisk again, or milk if it seems too thick.

It’ll look a bit like baby sick. Don’t worry about it. Cover with clingfilm and leave it to rest an hour. Or leave it until you’re half cut and it’s dark so all your photos look completely rubbish.

Mix the bourbon, honey and Tabasco together to make a glaze and either grill your sausages and baste them the whole time or, if like me your oven is broken, pan fry them until they’re browned all over and then fling in all your glaze and let them cook in that.

Cook your pancakes as usual (instructional video here) and plate up. Spread a teaspoon of mustard over your pancake:
