Blueberry Compote

I am so proud of myself. I did this ALL FROM MY MIND and not from a recipe. I love compote and I love it incredibly tart so take that as a warning. If you prefer it sweeter add a touch more honey.

You need:

  • 400g frozen blueberries
  • Juice of half a lime or four tablespoons of lemon juice
  • Squeeze of honey
  • ¼ to ½ a teaspoon of cinnamon

Blueberry Compote

Stick half the blueberries in a pan along with everything else on a medium heat and let it come to the boil. Smoosh up the berries a bit with a spoon, let it simmer and keep stirring it so it doesn’t stick to the pan until it reduces to a wonderful, thick, dark goo.

Goo doesn’t sound very appetising but that’s what it is. Give it a little taste – let it cool first or you’ll burn your tongue like some idiot that definitely isn’t me – add more lime juice or honey to taste if necessary and let that reduce again.

Add the rest of your blueberries and let them heat through for a few minutes. Stir through another couple of teaspoons of lime juice and you’re done! Isn’t the colour just totally fantastic?

Serve hot or cold. I ate mine with pancakes and would be eating it with cheesecake right now if it wasn’t for the Hell Diet I have put myself on before going on holiday.
