All I want to spend my time doing is eating these brownies. I mean, obviously, they’re chocolate. And caramel. And carbs. They’re the best thing in the world apart from chips because omg chips.
These are so easy to make – they’re Nigella’s Everyday Brownies but rather than just using chopped milk chocolate in the mix I used whole chunks of Cadbury Caramel because I am a genius.
I made these last week and they lasted for a good few days. God knows how though.
You need:
- 150g of unsalted butter
- 300g light Muscovado sugar
- 150g of plain flour
- 75g of cocoa powder
- A teaspoon of bicarbonate of soda
- A pinch of salt
- A teaspoon of vanilla extract
- 4 eggs
- 200g enormous block of Cadbury Caramel
- Grease-proof paper because without it you will hate your entire life
Chop up the chocolate into separate squares and put to one side. Stick the oven on at 190°c to heat up. Line a baking tray with grease-proof paper. I can’t work out for the life of me how to do this neatly.
Melt all the butter in a large pan on a very low heat and once that’s done chuck in the sugar and stir in until it’s soaked up the butter and it’s a wonderful, unctuous, thick goo.
Sift the flour, cocoa powder, bicarb and salt into the butter and sugar, mixing in until it’s a heavy, dark mix.
It’ll seem quite dry but that’s FINE. Take this off the heat now so it can cool down.
In a bowl whisk up your four eggs (I use medium because I feel sad for chicken bottoms when I buy large eggs) with the vanilla extract and then stir it into your chocolatey, sugary, amazing mix. Suddenly it’ll become glossy and amazing.
Let this cool a bit more. You don’t want it to start to become to thick to pour or stir but you don’t want it hot enough that it melts all your chocolate chunks completely. Once that has happened quickly stir in all your chocolate.
You never would have understood all of that without that photo, would you? There’s another one coming with the next massively complicated instruction, too.
Pour this all into your lined baking tray and pop it into the oven on the middle shelf for about 20 minutes. I find mine always take quite a bit longer but you’ll know when they’re done when the top is set but there’s still a bit of a wibble underneath.
Once your brownies are out of the oven put them on a cooling rack and GUESS WHAT? Let them cool. They’ll firm up nicely too. Once completely cold slice in to nice big slabs of amazing chocolate. Slab is the only word for these. You want a good half-a-house-brick of these.
The best thing about them? POCKETS OF CARAMEL. Eat these while avoiding doing your tax return, like an adult.

Hello! I just thought I would leave a comment in an attempt to quit being a lurker….I made these brownies and they were awesome! They were a bit dry, I think I just need more practice with measurement conversions. Anyway they served as breakfast for my 15 year old for about a week! Bad I know but at least he ate something :)
Hi Jess! Thanks so much for your comment. I absolutely cannot do conversions to save my life, but the definitely shouldn’t be dry. Maybe add a small gloop of vegetable oil when the eggs go in? Though please remember that I have no idea what I’m talking about… Also PLEASE ADOPT ME xxx
Excellent, will try! Was wondering if I should add an extra egg or some water. Vegetable oil is good advice :) These were so good I am determined to perfect them. I think I best just order real world (metric) measuring cups online….Better yet you’re adopted….come make us brownies and I will let you eat them for breakfast!
